Add the Beer: Pour 350 ml beer into the dry ingredients and mix until a shaggy dough forms.
- 3
Knead the Dough: Transfer the dough onto a floured surface and knead for 5-10 minutes until smooth and elastic.
- 4
Let It Rise: Place the dough in a well-oiled bowl, cover it with a damp cloth, and let it rise in a warm spot for 1.5-2 hours or until doubled in size.
For the Cheese Filling
- 1
Mix Ingredients: Combine mozzarella, shredded cheese, cream cheese, basil, parsley, diced garlic, salt, and pepper in a bowl. Microwave the cream cheese for a few seconds if needed to soften.

Assembling the Dough Balls
- 1
Prepare the Dough: Once the dough has risen, tip it onto a floured surface and knead for 2 minutes to form a smooth ball.
- 2
Divide and Shape: Divide the dough into quarters, then divide each quarter into 3 sections, rolling each section into individual balls (12 balls total).
- 3
Stuff the Dough Balls: Flatten each ball into a small pancake, place a teaspoon of cheese filling in the centre, fold the edges over the cheese, and roll back into a ball. Repeat for all dough balls.
- 4
Air Fry the Dough Balls: Place the stuffed dough balls into your air fryer basket, ensuring the bottom is oiled to prevent sticking. Brush the tops with garlic herb butter.
- 5
Cook: Air fry at 180°C (356°F) for 7-10 minutes or until golden brown and expanded. Check at 7 minutes to prevent cheese from bursting out.
- 6
Serve: Serve warm with olive oil or your favourite tomato pizza sauce.
Notes
Notes
Make Ahead:
You can prepare the dough in advance and let it rise in the refrigerator overnight. This can help develop a deeper flavour in the dough.
Store it in an airtight container in the refrigerator for up to 24 hours. When ready to use, let the dough come to room temperature before shaping into balls.
Roll Tight:
Roll the dough balls tightly to keep the cheese in the middle.
Rest the Dough:
If the dough is not pliable, let it sit covered with a damp cloth for 10 minutes.
Don’t Forget the Salt:
Add the salt to the flour when making the dough.
Storing Baked Dough Balls:
Store any leftover baked dough balls in an airtight container at room temperature for up to 2 days.
Reheat them in the oven or air fryer at a low temperature until warm and crispy.
Reheating:
Reheat the dough balls in an air fryer at 150°C (300°F) for 5 minutes or in an oven at 175°C (350°F) for 10-12 minutes until heated through.
Substituting Beer:
If you prefer not to use beer, you can substitute it with an equal amount (240 ml) of water, milk, or a combination of both. Milk will add a bit of richness to the dough.
You can also use sparkling water to mimic the carbonation effect of beer, which can help create a light and airy texture.
Cheese Filling:
For the cheese filling, make sure the cream cheese is at room temperature or slightly warmed to make mixing easier.
