Whipping up this Lychee and Cucumber Gin Fizz Cocktail is a breeze. All you need is a tin of lychees, a cucumber, lime, gin, lychee liqueur and soda. Blitz the lychee and cucumber for your base, then build away. EASY, PEASY, LIME SQUEEZY.

Ingredients for the Cocktails
- 1 560g Tin Lychees in syrup
- 1 Large Cucumber
- 1 Lime Juice
- 1 700ml Bottle Gin
- 1 700ml Bottle Paraiso Lychee Liquor
- 1 700ml Bottle Soda Water

- 40 ml Cucumber/Lychee Juice
- 15 ml Lime Juice
- 40 ml Gin
- 20 ml Lychee Liquor
- Soda Water, Top it off
- Ice

Per Cocktail

Make the Lychee/Cucumber Juice: Blend one large cucumber and the lychees from one tin of lychees in syrup until smooth. You will only need about 60 ml of the liquid from the tin the rest can be discarded. Strain the mixture through a fine mesh sieve to obtain the juice.

Mix the Juices: In a cocktail shaker, combine 40 ml of the freshly made lychee/cucumber juice and 15 ml of lime juice.

Add the Spirits: Pour 40 ml of gin and 20 ml of lychee liqueur.

Shake: Add ice to the shaker and shake well about 20 seconds of shaking should be good.

Strain: Strain the mixture through a cocktail sieve into a glass filled with ice.

Top Off: Top off with soda water.

Garnish: Garnish with a cucumber ribbon and a whole lychee on a cocktail stick for some extra pizzaz.
